6-ish more weeks to go

Looking through name books...putting together a baby registry...sewing a baby quilt...eating for two...walking and enjoying the gorgeous spring weather (as well as the exercise!)...sleeping a little more...enjoying feeling our lil' girl kick and squirm...(trying) to finish up some projects...

cuz' only 6 more weeks till baby's due date! Now to wait and see if she decides to arrive on time, early, or late. [smile] I'm so excited about meeting this precious baby. After countless childhood memories of playing with dolls, enjoying and helping with new lil' siblings, and holding friends' little ones, it seems somewhat surreal that I'll soon have a baby of my own to snuggle and love!

The last several months has definitely been an exciting adventure as I've figured out what works best -- and the next few months will be full of even more adjustments and new experiences. I'm continuing to feel extremely well (except for the getting-more-frequent kick in the ribs!) for which I am very thankful.

a new season

Dan made it home safely from California after the bar -- thank you for your encouragement and prayers! After 4 years of school and an intense 2 month for bar prep review and countless study hours, its sometimes surreal to realize he's done and that milestone is behind us!

(I was a pretty happy wife when I was able to pack these books away last month!)

We are rediscovering a new 'normal' now...and it has been simply fabulous. Though our work schedules have remained the same, it is amazing how much more time is in a week when after getting off of work, we get to spend the whole evening together!

Tackling projects or working in the kitchen together, preparing for baby (more baby-bump pictures coming soon!), enjoying the gorgeous spring weather, grilling out, taking time to relax and savor this wondrous gift I've been given in marriage to my best friend -- truly, my blessings overflow!

White Chicken Chili

I love being able to throw ingredients in my slow cooker before walking out the door in the morning -- and then returning home to find delicious smells wafting through the house and supper ready to serve. This is the latest slow-cooker soup recipe I tried and Dan and I both really enjoyed it (and the leftovers the next day!)

What is one of your favorite crock-pot recipes?

  • 1-2 lb boneless, skinless chicken breasts, cut into bite size chunks
  • 1 medium onion, chopped
  • 2 cloves fresh garlic, finely minced (or 1/2 tsp garlic power)
  • 2-4 cans great northern beans, drained and rinsed (use your own judgement here; if you like lots of beans, add 'em all! I only used 2 cans and we really liked the bean/soup ratio)
  • 1 can (14.5 oz) chicken broth (or use homemade!)
  • 2-3 cans (4 oz) chopped green chilies (or less, if you don't like as much kick!)
  • 1 tsp salt
  • 1 tsp dried oregano
  • 1/2 tsp pepper
  • 1/2-1 Tblsn cayenne pepper
  • 1 C sour cream
  • 1/2 C whipping cream
Place all but last two ingredients in the crock pot (chicken can be frozen). Cook on low for 6-8 hours. Thirty minutes before serving, add sour cream and whipping cream and stir. Let simmer for remaining 30 minutes.

Serve with cheese and tortilla chips (and olives and salad and salsa and any other toppings you might like!)
