last week marked three months of "mommyhood" to the most precious bundle of cuteness.

Chocolate Chip Salted Caramel Cookie Bars

Just in case you are looking for a super unhealthy and amazingly delicious treat that contains all the ingredients of a true dessert, this is the recipe for you! (I think this is one of those recipes I will only let myself make every other year, unless I'm taking them somewhere to share...   they are too dangerous sitting around at my house!)  


You will need:

2 1/8 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
12 tablespoons butter, melted and cooled to room temperature
1 cup light brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
2 teaspoons vanilla extract
2 cups chocolate chips
10 ounces caramel candy squares, unwrapped
3 tablespoons heavy cream  (or a mixture of yogurt & milk)
Sea salt, for sprinkling over caramel and bars

directions:

Preheat oven to 325 degrees F. Spray a 2-quart baking pan (which is an 11 X 7 pan-I used a glass Pyrex dish) with nonstick cooking spray and set aside.
In a medium bowl, whisk together flour, salt, and baking soda. Set aside.
In the bowl of a stand mixer, mix the melted butter and sugars together until combined. Add the egg, egg yolk, and vanilla extract and mix until smooth. Slowly add the dry ingredients and mix on low, just until combined. Stir in the chocolate chips.
In a large microwave safe bowl, combine the caramels and heavy cream. Microwave caramels on High until caramels are melted, stirring every 20 seconds. This will take about 2 minutes, depending on your microwave.
Divide the cookie dough. Press a little more than half of the cookie dough into the prepared pan, smoothing the top with the spatula. Pour hot caramel over the cookie dough. Sprinkle caramel with sea salt. Drop spoonfuls of cookie dough over the caramel and spread dough with a spatula until the caramel is covered. Sprinkle the bars with additional sea salt.
Bake cookie bars for 30 minutes or until the top of the bars are light golden brown and the edges start to pull away from the pan. Cool bars on a wire rack to room temperature. Cut bars into squares and serve. Or hide them in the cupboard eat them all yourself. [grin]  


This recipe can also be cut in half and baked in a 8x8 square pan.

Hello, real life!

Dan was up and out the door for work this morning at 7:30-- his first day at his new job!

After cleaning up breakfast, I surveyed the stacks of boxes. Literally EVERYWHERE.

Feeling a bit overwhelmed and still tired from the last few days and several short nights, I hoped decided that getting myself all ready for the day would help give me energy for the big task that was staring me in the face.

Read 1 Thessalonians 1.

Showered.

Wanted to wear something cute to help keep me moving,  only to look in the closet and be reminded that most of the clothes don't fit all that well due to my new 'motherly' figure. Oh well. The precious baby girl at my house is soooo worth it.

So moved along to figure out what to do with my hair -- and was completely unable to find a hairbrush.
Or even a comb. Which really baffled me as I had one yesterday.

Forgetting any makeup or earrings, I fed my sweet little girl and tucked her in for a nap -- and promptly snuggled in beside her for a little more rest.

Gotta' love real life. It's the stuff days are made of. [smile]

Wisconsin -- here we come!

It has been an amazing, faith building month.

Dan left his job in Virginia in June and we brought all our belongings to Nebraska with us, wondering what the next chapter of our lives would hold. I felt a lil' like Abraham; we packed up all the boxes and headed out -- not quite sure where we would be going! 

Our time in Nebraska has been so delightful, spending time with family is always so precious, as well as catching up with other dear friends! [My camera has been busy; once we have internet at our new place I look forward to filling you in on the past few weeks!] We have also had a very, VERY packed schedule. Once I found myself thinking: "Okay, I'm ready to head home and have some sort of routine in my life again" -- all the while picturing home as the apartment we had in Virginia! 

During the short time we've been in Nebraska, Dan flew to Wisconsin for a job interview -- and now I find myself preparing to once again load a truck today. 

Tomorrow we will be moving to our new home! 

Arianna has been such a trooper with everything going on. Before she has reached the three month mark she will have lived in 3 different states and driven through a dozen others. I still find myself looking at her sweet face and asking myself "Am I really the mommy of this adorable, precious baby?" And with  4 grandparents, 25 uncles and aunts, and 6 cousins, she has gotten more than her fair share of attention. [grin]
