Cooking for two

...has been a fun adjustment!

A gallon of milk lasts us more than 1 meal [grin].
A quart of yogurt lasts a whole week.
Bake a batch of banana bread and instead of it all getting devoured for supper, half of it has to go in the freezer so it doesn't spoil before we can eat it!
One pizza provides us with supper and a lunch for Dan.
The trash only needs taken out once a week -- imagine that!
And laundry -- two batches a week keeps us all caught up.

I'm halving recipes like crazy, learning lots, and having fun while doing it!

The last few weeks I've been working at organizing my kitchen and now I'm working at organizing my meal plans. My goal is to write out the menu every week and since I finally succeeded this week, I thought I'd share with you what we'll be eating!

Breakfast:
baked oatmeal (2x)
waffles
malt o'meal
eggs and banana bread

w/ fruit and milk or yogurt

Lunch: (Typically its leftovers from last week - works great for packing lunches!)
chili
BBQ chicken sandwiches
beef enchiladas
homemade pizza
taco stew

Dinner:
chicken tetrazinni, cooked carrots, bread
Mexican lasagna and salad
chicken, mashed potatoes, beets
stir-fry veggies and chicken with rice
roast beef, baked sweet potatoes, beans, rolls

Snacks: muffins, yogurt, Hershey kisses, pears, carrot sticks

Laura had to make the same kind of adjustment when we were first married. Those days have long passed :-)

Oh I so understand. : ) I recently got married on the 5 of Dec. Cooking for 2 has been so different than the 10 I was used to. : ) But married life has been so great! <3 God is so good. I pray that you and Dan have a very happy life together! God bless! <3

Cooking for two is something that I think about every now and then. I cook for 11 when I do cook, and cooking for two will be interesting if I get married!

Thanks for sharing this fun post. And I have to agree with everyone - your kitchen is very cute!

I married my sweetheart over a year ago and I remember those adjustments going from cooking for a family of 15 to the small meals for the two of us. Shopping is incredibly different too, isn't it? :-)

Your kitchen looks cute and cozy. Thanks for sharing!

lol I love this post. As the oldest in our family I get a LOT of teasing about how I won't be able to cook for just myself and my husband, as I've been cooking in large amounts my entire time in the kitchen. (I've tried it more then once while babysitting or house sitting and have yet to master it).

My siblings and friends talk about the deep chest freezer they are going to have to get me when I get married for the left overs, so I won't have to invite people over every day.

My mom teases me all the time about how different it will be to cook for 2 instead of 10:) I'll be like you - cutting everything in half instead of tripling and quadrupling lol!!!

Blessings to you - oh yes, I love your kitchen:)

I could not imagine the switch from all those people to 2! I live in a family of twelve and things are just like you said, devoured!

I love your kitchen by the way!

What a cute, cozy kitchen you have. You are so organized to have weekly menues planned. I've thought about trying that but I haven't accomplished it yet. Happy cooking. Good thing Dan enjoys leftovers.

Oh, how sweet, Bethany! What a big change you're making from 15 to 2!! However, in twenty years, your household numbers may travel up to 15! ;) [wink, wink]
Your menu looks delicious, and your kitchen is so cute! [Not exactly the word to describe a kitchen, but it seems to fit yours.] :) I'm sure Dan loves your cooking!
Love in Christ,

I got married last summer and had a big adjustment in cooking too! I usually remember to divide recipes, but there was one week when we ate Chicken Spaghetti four times because I forgot I wasn't cooking for my entire family. :) Have fun menu planning - I've found it to be very helpful as well.

Haha...I come from a big family...or medium, compared to yours. ;) Once I was forced to cook for two (my dad and I were the only ones around) and I made WAY too much. Less than normal, but still sooo much food that we had to toss some of it. :P I wonder how it will be if/when I get married...my poor husband. ;)

Would you mind sharing your beef enchilada recipe? I've been trying to find a good recipe that doesn't take too long!

I got married on Jan. 8 and even though my family isn't as big as yours...going from 8 to 2 was still an adjustment! I'm getting better, but we still eat lots of leftovers!
